ChrisBo's Salsa Makes about 3 Quarts 2 Green Peppers 1 Bunch Green Onions 1 Medium Red Onion 1 Medium Vadalia Onion 1 Medium Yellow Onion 1/2 Head Garlic 1/2 Bunch Fresh Cilantro 1/4 C Red Wine Vinegar 1/4 C Cidar Vinegar 1/4 C Basalmic Vinegar 1/4 C Ketchup 1/4 C Red Hot 1/4 C Lemon Juice 1/4 C Lime Juice 1/4 C Sugar 2 Tbls Olive Oil 1 Tbls Cumin 1 Tbls Oregeno 1 tsp Dry Mustastard 1 tsp Salt 1 tsp Black Pepper 1 tsp Paprika 3 Tomatos Dice Onions & Peppers. Mince Garlic and Cilantro. Toss together. Mix Vinegars, Juices, Ketchup & Spices. Add Sauce to diced vegies. Adjust to taste. Dice Tomatos and mix in. Chopping as much as possible by hand with a sharp nice keeps a nice consistancy. The mixture will improve and get hotter over night in the fridge.
